Young, Successful & Growing: Emily Meko, Eat What's Good, Chatham-Kent

Like many entrepreneurs, Emily Meko’s entrepreneurship journey began with her investment in her own interests, specifically a desire to eat well and a passion for cooking. Now, aged only twenty-three, Emily dreams of expanding her already successful business and of enhancing Chatham-Kent.

Born of Passion

In her younger teen years, Emily Meko’s lifestyle and diet weren’t always so healthy. However, when she began to notice how her food choices affected her health, she decided to experiment with her diet and learn about proper nutrition in order to get her body feeling up to a high standard. Her journey led her to vegetarianism and eventually veganism, which came with its own challenges.

By the time Emily was in first year of university (2009), she was a pretty decent cook, often creating unique dishes to accommodate her diet and nourish herself properly. She became known for her quirky but delicious, healthy meals and snacks, and a few of her friends jokingly encouraged her to market some of her creations. At the time, owning a business and making a living from cooking was far from Emily’s mind.

Encouraged by Affirmation and Coming Back to Chatham-Kent every summer

The summer after her first year at university, Emily came back to Chatham-Kent to work as a prep cook at Maple City Golf Course, when an idea was proposed to her. The Kent Club in Chatham hosted a downtown farmers market every Saturday, and a friend recommended that she package some of her dishes to sell there. On a whim, Emily took up the idea and sold out of the small amount of food she had prepared. She continued throughout the summer, bringing a little more food each week. At that point, the market was just a fun weekend project, but during her second year of university, Emily deliberated over plans for the following summer and dreamed about what her business could become.

The second summer proved to be another success. By the time Emily’s third summer was approaching, she committed to making her business, “Eat What’s Good”, her fulltime summer job. No longer working at the golf course, she was counting on the evidence of the past—that the prepared, nutritious, delicious dishes that she had to offer would be in high demand in Chatham-Kent. The demand was greater than Emily could have ever imagined. After her graduation from culinary school Emily opened Eat What's Good in June 2014, which is now located at 67 St. Clair Street in Chatham.
