From Dishwasher to Chef
Brian Machado is the son of a couple who immigrated from Portugal to Chatham-Kent. His first job in a restaurant was working as a dishwasher in Chatham as a teenager; first at Swiss Chalet, and then at Pranovi’s. Among the soap suds and dirty plates, Brian experienced something special enough to make him want to become a chef.
After high school, Brian pursued a culinary career with great ambition, completing two, two-year culinary programs, one at St. Clair College, Windsor and one at George Brown. Following this, he journeyed to Europe to hone his technical skills. With help from his hospitable family members, he went door-to-door offering volunteer work for the opportunity to learn from some of the best chefs in the world, at establishments such as Le Petit Rose in Paris and the Casa Rio in Portugal.
After a year and a half, Brian was hired as a Sous Chef at the Sheraton Hotel in Lisbon. However, his adventure had left him an ocean apart from home and his longstanding girlfriend, who was also a Chatham native. When his boss in Lisbon discovered a job opening in London, Ontario for a Food and Beverage Manager at the Four Points by Sheraton, Brian finally returned to southwestern Ontario.
Bringing Success to Chatham-Kent
Once back in Canada, Brian’s career continued to blossom. It wasn’t long before he was married to his long standing girlfriend and living in Toronto, where he opened four Baton Rouge restaurants. The GTA was a great place for the couple, but when expecting their first child, they decided to return to Chatham-Kent.
For the first three years back in Chatham-Kent, Brian commuted to work as a chef at Caesars Windsor. Then one day, Brian’s father encouraged him to take a look at a restaurant that was for sale. In no way, shape, or form did the existing restaurant resemble the kind of establishment Brian wanted to run, but after a great surprise—discovering his father had already bought it—the Machado family created the Chatham Breakfast House and Grille.

Since the restaurant, Brian and his family have enjoyed tremendous success, and the restaurant has enjoyed a continuous stream of praise from locals and visitors. In 2010, the business also expanded to include Four Diamonds Catering, in conjunction with the Chatham-Kent Armoury. Throughout the experience, Brian has maintained his commitment to serving top-of-the-line dishes made from quality ingredients. Both the restaurant and catering service have made their mark in southwestern Ontario, and make a positive statement about the offerings available in Chatham-Kent.
